EASY SHARPENING, QUALITY RESULTS

Sharper than I expected

“I’d nearly given up on a few of my old kitchen knives because they were so dull, but this sharpener brought them back to life. It took a little patience on the first blade, but the results were impressive. Now they cut smoothly and feel even better than when they were brand new.”

Michael R. 🇨🇦

Fast results and simple to use

“I’ve tried several sharpening tools before and most of them were difficult or didn’t really improve the blade. This one was different. Within minutes my chef’s knife was slicing cleanly again. The setup is straightforward and the whole process feels effortless.”

Daniel T. 🇦🇺

Great for everyday kitchen use

“I wasn’t sure this would make much difference, but after testing it on a few knives I’m genuinely impressed. The guide keeps everything steady and it feels very secure while sharpening. It’s compact, easy to store, and works far better than I expected.”

Sarah L. 🇺🇸

How to use
Using the Novara Rolling Knife Sharpener

Get professional-level sharpness at home by following these simple steps:

Choose the Correct Angle:
Find the sharpening angle that matches your knife — usually 20° for Western-style knives and 15° for Japanese knives. If you’re unsure, a quick online search can help identify the right angle for your blade.

Lock the Knife in Place:
Position the knife securely against the magnetic holder to keep it stable and safe while sharpening.

Begin Sharpening:
Start with the coarse 400-grit disc and roll evenly along one side of the blade. Once complete, flip the knife and repeat the process on the opposite side.

Finish with the Fine Disc:
Use the 1000-grit disc to polish and refine the edge for a smooth, razor-sharp finish.

All Set!
Your knife is now sharper, smoother, and ready to use safely.

FAQ'S

How long do I have to sharpen the blade before my knife is sharp?

The amount of time required will vary when a knife is sharpened for the first time with the Kestrel, depending on the condition of the blade and the quality of the steel. On average, it takes five minutes. The edge must first acquire the chosen 15° or 20° grinding angle. However, thanks to the

constant grinding angle, only a few rolls back and forth are needed for subsequent resharpening.

How can I clean the diamond sharpening discs?

To remove grinding residue off the diamond discs, simply dab with a damp cleaning rag.

How do I sharpen knives that are higher than the sharpener?

To grind particularly broad blades, where the cutting edge stands higher than the grinding disc, elevate the sharpener with a suitably thick cutting board to ensure contact with the cutting edge is within the radius of the diamond grinding disc.

How do I know what angle to sharpen with?

Generally, western knives use the 20° angle, while Japanese knives will be 15°. To find out for specific knives, a quick Google search should give you the answer.

Will the diamond discs wear out?

Our discs are made with diamond, the hardest material known to man.

When used correctly the Kestrel diamond discs shouldn't ever need replacing.
